  1. Peel pummelo, extract the segments as intact as you can, separate into small 3/4" pieces.
  2. Combine all ingredients except cilantro and peanuts.
  3. Toss gently in a mixing bowl.
  4. Serve lightly chilled with cilantro and fried shallots if desired.
